Cassoulets and Ready Meals
Cassoulet takes its name from its traditional cooking pot, the ‘Cassole’, a deep round earthenware pot with slanting sides.
The name derives from the old Occitan word ‘Caçolet’.
It is typically a rich, slow cooked bean stew or casserole originating in South Western France containing meat (normally pork sausages, pork, goose, duck and sometimes mutton) pork skin and white haricot beans or lingots.
The best-known regional varieties come from Castelnaudary, Toulouse and Carcassonne areas. The differences are mainly down to the type or quantity of meat used.
